Rasmus Kofoed is the chef patron of Geranium restaurant in Copenhagen. He trained at the Hotel D’Angleterre in Copenhagen before working at the two-Michelin- star Scolteshof in Belgium. Returning to Copenhagen, he worked as head chef at several top restaurants before opening his own place, Geranium.
Rasmus’s food is light and delicate and inspired by nature and the changing seasons. Watch how he creates the “Razor clam” that he has worked on for over two years, followed by tomato water, jelly of local ham & sorrel flowers, then “Jerusalem artichoke tree”, essence of caramelised Jerusalem artichokes, dried Jerusalem artichokes, salted apples, pine & browned butter; and finally, cream infused with beech wood, beer and crispy & soft prunes which Rasmus describes as his best Geranium dish so far.
